<kolhell> Wanna hear something crazy tho? Big Al's actually has a decently clean kitchen. And their burger (used to be) ground from a whole shitload of tenderloin and ribeye scrap.
<kolhell> Like, all the trim from the high-dollar steaks downstairs used to get ground fresh and mixed in with whatever else they use. I assume they still do it that way but I haven't really talked to that kitchen in 7yr.
<kolhell> Almost the entirety of the grossness that is Big Als is from the clientelle, but they have a dedicated cleaning crew scrubbing the floors and under the equipment every morning at like 5a.
<kolhell> Some of the stuff I've seen there, tho... that women's room is hands down more disgusting than some literal buckets I've pissed in.
<kolhell> THe regularity with which people have to take paint scrapers to tampons that are dried to the wall above the trash can. Like they thought it would bounce off and fall in but NOPE IT STUCK TO THE WALL AND DRIED THERE OVERNIGHT they seriously have a dedicated paint scraper for this purpose.
